I’m searching for the best, easy healthy dinner recipes for my Healthy Summer Dinners collection at Foodie.com. To me, a healthy dinner means a meal that includes things like wholesome grains, fruits, vegetables and lean protein.

During the week, a sit down dinner with the entire family can be hard to come by. But the weekends are a different story around here. We let the kids help us decide what we should cook, then we go grocery shopping together. Sometimes the entire family even helps me make dinner. Dinner on Sunday is the perfect chance for us to try new recipes together. We are a pretty casual crowd – so please don’t expect me to set out the fine china.

Note: I include slow cooker meals, even though the actual cook time on those is longer…slow cooker meals usually don’t involve much prep time and are some of the easiest dinners to make.
