Pumpkin Spice Caramel Corn
Homemade caramel corn is especially easy to make in the slow cooker. Add a little bit of Pumpkin Spice for a delicious Fall flavor twist.

  1. Spray a 6-quart slow cooker with cooking spray. Line a baking sheet with wax paper and set aside.
  2. Add butter, brown sugar, and corn syrup to the bottom of the slow cooker. Cover and cook on High heat setting for 30 minutes. Then, carefully remove the slow cooker’s ceramic insert and rotate it one-half turn (180 degrees.) Continue to cook on High heat for another 30 minutes or until caramel mixture is bubbling around the edges.
  3. Remove the slow cooker’s cover and turn heat setting to Low. Stir in baking soda, pumpkin spice, and vanilla until well blended. The mixture will foam while being stirred. Add popcorn 1-2 cups at a time and carefully stir to coat popcorn with the caramel mixture. Be sure to scrape the bottom and sides of the slow cooker.
  4. Continue to cook, uncovered, on Low heat setting for 30 minutes to an hour, stirring well every 10 minutes. Be sure to stir all the way down to the bottom of the slow cooker to avoid burnt caramel corn.
  5. Spread popcorn out onto the lined baking sheet and allow to cool 15 minutes. Store at room temperature in an airtight container.
