Shredded Cilantro Lime Chicken is ready in 20 minutes! Make this instant pot chicken recipe with boneless, skinless chicken breasts, real limes and cilantro. Shredded chicken is perfect for chicken tacos!
Put the chicken breasts into the instant pot. Sprinkle with salt and/or pepper. Note: If your chicken breasts are thicker than 1 inch, use a knife to cut them down to about 1/2 inch thickness to help them cook.
Squeeze the juice of 2 limes on top of the chicken breasts. Toss in half of the cilantro.
Select the “Poultry” setting and set the cook time for 20 minutes. Wait for the natural release, then open the lid.
Use a fork to shred the chicken breasts. Top with fresh cilantro leaves and if a more intense lime flavor is desired, a squeeze of fresh lime juice.
To make the tacos: Place a tortilla on a plate. Add a layer of shredded chicken. Top with shredded cheese, lettuce, pico de gallo, and fresh cilantro as desired.
