I got on a mug cake kick for awhile, then put my cookbook away and haven’t made any since.
My 9-year-old son was the person who got me back into making mug cakes. A few weeks ago, he wanted to make a chocolate mug cake like he had eaten at a friend’s house. It took me a few tries to find just the right pumpkin mug cake, but I finally hit on THE ONE. It’s easy because it starts with a boxed cake mix. The only other ingredients you need are pumpkin (I used canned pumpkin), pumpkin spice and water!
I did play around with the amount of pumpkin spice to put in the mug cake mix. I thought that 1/2 a teaspoon wasn’t pumpkin spice-y enough, and 1.5 teaspoons was way too much. Long story short, I eventually figured out that 3/4 a teaspoon of pumpkin spice is just the right amount for me.
