I am always on the lookout for easy Christmas appetizers during the holiday season. Last week, one of my kids brought home “The Grinch” fruit kabobs (green grape for the head, a banana slice for the Santa hat bottom, and strawberry topped with a mini marshmallow for the top of the hat). It was really cute! And led to the inspiration for today’s recipe. It’s not really a “recipe” – you can pretty much figure out how to make it by looking at the picture.
I have a lot of fresh basil growing in my AeroGarden. My favorite way to eat basil is in a Caprese Salad. So the other day, I looked at my basil plant and thought, I wonder if I could make a Grinch-looking Caprese bite. What do you think? (Use your imagination and humor me!) I think Grinch Caprese looks as much like him as the fruit skewers do.
A Caprese salad recipe is simple: basil, tomatoes and mozzarella drizzled with Olive Oil, salt and pepper. Caprese bites are those 3 main ingredients served on a toothpick. Skewer a basil leaf, a slice of cheese, half of a grape tomato and a round piece of cheese on a stick, call it The Grinch Caprese Kabob and voila, you have festive red and green healthy Christmas appetizers.
Drizzle these little Grinches with olive oil and salt and pepper to taste when you are ready to serve. I like to drizzle balsamic vinegar on mine.
