Strawberry Baked Pancakes
Baked pancakes are a delicious, time-saving recipe to serve for breakfast or brinner (breakfast-for-dinner.) We use our favorite berries to add flavor and nutrition to the mix.
Krusteaz Buttermilk Protein Pancake Mix
Unsalted Butter (melted and slightly cooled)
Fresh or Frozen Strawberries, chopped
Maple Syrup (for serving)
Preheat oven to 350 degrees. Spray a 9×13 inch baking dish with nonstick cooking spray.
In a medium mixing bowl, whisk to combine eggs, milk, lemon juice and butter. In a separate bowl, mix together the Krusteaz Pancake Mix, Sugar, Baking Powder, and Salt.
Stir the dry ingredients into the wet mixture to mix well. Spread batter evenly in the prepared baking dish. Sprinkle the chopped strawberries evenly on top of the batter.
Bake until a toothpick inserted in the middle of the pancake comes out clean; about 35 to 40 minutes depending on how quickly your oven bakes. To serve: Cut into squares and drizzle with maple syrup.
