Add broth, carrots, celery, onion, garlic, bay leaves, salt and pepper to slow cooker. Place chicken breasts in slow cooker and cover with lid.
Cook on low setting 6 to 8 hours, or until chicken is cooked through.
Remove bay leaves from slow cooker and discard. Remove chicken from slow cooker and shred into bite size pieces. Meanwhile, add egg noodles to the slow cooker and cook with the lid on for 20 minutes until they are tender.
Add shredded chicken to the soup. Stir well and serve. Optional: Garnish with fresh cilantro.
