How often does your family do taco night at home? I have a delicious recipe for you to try next time you are craving tacos. This shredded cilantro lime chicken can be made quicker than ever (20 minutes cook time!) in the Instant Pot.
Yes, I finally got one of those popular pressure cookers – and so far, I am really enjoying cooking with it. Have you got one? Sometimes I feel like I am the last person on Earth to get one. I’m not regretting my purchase at all.
The Instant Pot really lives up to the hype. I am still getting used to just how fast it can cook raw foods like chicken and other meat. My family is trying to eat at home more, so I am hoping this and meal planning will help me cook more of our meals. At the very least, I can use the Instant Pot for our weekly Taco Nights!
Shredded Cilantro Lime Chicken Tacos (Instant Pot Chicken Recipes)

Shredded Cilantro Lime Chicken is ready in 20 minutes! Make this instant pot chicken recipe with boneless, skinless chicken breasts, real limes and cilantro. Shredded chicken is perfect for chicken tacos!

- 3 lbs Boneless, Skinless Chicken Breasts
- 2-3 Limes
- 1 bunch Fresh Cilantro
- 1-2 tsp Salt
- Shredded Cheese
- Shredded lettuce
- Pico de Gallo
- Cilantro
- Soft Taco Flour Tortillas
- Put the chicken breasts into the instant pot. Sprinkle with salt and/or pepper. Note: If your chicken breasts are thicker than 1 inch, use a knife to cut them down to about 1/2 inch thickness to help them cook.
- Squeeze the juice of 2 limes on top of the chicken breasts. Toss in half of the cilantro.
- Select the "Poultry" setting and set the cook time for 20 minutes. Wait for the natural release, then open the lid.
- Use a fork to shred the chicken breasts. Top with fresh cilantro leaves and if a more intense lime flavor is desired, a squeeze of fresh lime juice.
- To make the tacos: Place a tortilla on a plate. Add a layer of shredded chicken. Top with shredded cheese, lettuce, pico de gallo, and fresh cilantro as desired.

The Shredded Cilantro Lime Chicken is a good one, and useful. You can even leave out the cilantro and lime juice (just sub in some chicken broth for the juice) and cook plain shredded chicken. We use shredded chicken for tacos, salads and pasta dishes.
