No Bake Chocolate Oatmeal Cookies
April Fools! Use an ice cream scooper to shape no bake cookies to look like real ice cream scoops. They aren’t chocolate ice cream, but these chocolate oatmeal no bake cookies will still be a delicious way to start April Fools Day.

  1. Combine the honey, peanut butter, Coffee-mate Café Mocha, and vanilla in a medium sized, microwave-safe bowl. Microwave for 20-30 seconds and stir ingredients until well-mixed.
  2. Add the oats and crispy rice cereal to the mixture. Stir to combine.
  3. Use about 2 Tablespoons of the dough to form balls. Flatten balls into a cookie shape. Serve. *To make ice cream shaped cookie dough balls: Put dough in the freezer and chill for at least 15 minutes (do not freeze.) Use an ice cream scooper to scoop out dough balls shaped like ice cream scoops. Serve on top of ice cream cones.
