These no bake energy balls are a delicious and nutritious snack, packed with protein from peanut butter, oats and ground flaxseed.

Instructions
  1. Mix all ingredients together in a bowl. Cover and chill in the refrigerator for at least 30 minutes.
  2. Once the mixture is chilled, use your hands to roll into balls (about 1 inch rounded size.)
  3. Store in an airtight container for up to one week.

How To Toast Coconut Flakes: PlaceĀ a thin layer of coconut flakes on a baking sheet in a 325 degree oven for 5 to 10 minutes. Toasting coconut flakes really brings out the coconut flavor. Allow them to cool completely before using in the energy balls recipe.
