Preheat oven to 350 degrees. In a small mixing bowl, whisk together Flour, Corn Starch, Baking Soda and Salt. Set aside.
Add softened Butter and both Sugars to your electric mixer’s bowl and mix on medium speed until well combined. Mix in the egg and vanilla.
Set the mixer to a low speed, and slowly add in the dry ingredients from Step 1. Mix well. Use a spoon to stir in chocolate chips.
Scoop cookie dough out 1/2 a rounded teaspoon at a time and drop onto a prepared cookie sheet about an inch apart. Shape the dough into ball shapes. Add a chocolate chip to the top of each dough ball (optional.)
Bake in preheated oven for about 6 minutes. For best results, remove cookies from the oven while they still look slightly under-baked. The cookies will cook a little bit more while they cool on the baking sheet for about 2 minutes. Transfer cookies to a wire rack to finish cooling.
