St. Patrick’s Day Treats: Popcorn Balls on Ice Cream Cones

I was trying to think of a different type of treat to send to my son’s school for an upcoming bake sale. St. Patrick’s Day is coming up, so I thought it would be fun to make something GREEN. These easy popcorn balls on ice cream cones are fun to eat! Just ask my “testers” who were happy enough to eat them last night for dessert.

I mixed in Mint M&Ms because they are green. But you could easily leave those out because the green sprinkles add plenty of color. Then again, mint chocolate popcorn balls do taste really good! I must have a thing for M&Ms and popcorn balls – here’s my very similar recipe for Mini M&Ms Covered Popcorn Balls.

How To Make Popcorn Balls on Ice Cream Cones

Ingredients:

makes about 8 popcorn balls, depending on size

  • Popcorn (6 cups, popped)
  • Mini Marshmallows (10 oz. bag)
  • 2-3 T. butter
  • Green Sprinkles
  • Ice Cream Cones
  • Optional: Green Mint M&Ms (as many as desired – I used about a cup.) Tip: Freeze M&Ms beforehand so they melt less when you add them to the warm popcorn ball mixture

Directions:

  1. Pour green sprinkles into a small bowl and set aside. Melt butter and marshmallows over medium low heat until smooth. Remove from heat.
  2. Stir in popcorn and coat it thoroughly. Stir in M&Ms if desired.
  3. Working quickly, fill each ice cream cone with the popcorn mixture. Then, shape about a cup of popcorn mixture into a ball and secure it on top. Try to shape it so it resembles a scoop of ice cream sitting on top.
  4. Carefully dip the popcorn ball into a bowl of green sprinkles. Repeat steps 3 and 4 with the rest of your cones and popcorn mixture until done.
  5. Popcorn mixture will harden as it cools. Once the popcorn balls have cooled and are fully hardened, you can carefully placed them in single layer for storage. Best if served within 2 days.

    These are so festive! I love the tip about freezing the m&m’s before adding them to the warm popcorn. I never think of stuff like that. I also am loving how you got your ice cream cones to stand up–great idea! I just might have to be super mom and whip up a batch of these for my kids next week.
