Peppermint Patties are one of my favorite candies – I especially love to eat them frozen. (If you’ve never frozen your peppermint patties before, I highly recommend trying them that way.) And now I know how to make them at home.
This recipe uses marshmallow fluff and peppermint extract to make a creamy filling that you can shape and dip in chocolate coating OR take the easier route (like I did) and make a layered bark.
The Sweet Creations Spring Silicone Bark & Chocolate Mold is the newest addition to my Sweet Creations spring cookware tools. Many of the Good Cook bloggers (including myself) received this free product to test out. We have all been amazed with the Spring Bark Mold and its creative possibilities.
I’ve already made a couple of different sweet treats with it, including a peanut butter fudge and this chocolate and peppermint bark. The designs are so cute, and perfect for spring and Easter holidays.

Peppermint Patties Bark Recipe
- 1 jar of marshmallow fluff (7 oz)
- 10 T unsalted butter at room temperature
- 1.5 tsp vanilla extract
- 1 tsp. peppermint extract
- 5 cups confectioner’s sugar
- 3.5 cups chocolate chips, divided (I used semisweet but think dark chocolate would taste amazing)
Note: This bark has 3 layers: chocolate, peppermint cream, and chocolate. The first chocolate layer has to have time to set before the creamy peppermint layer can go on top. And the last chocolate layer has to set before you can remove the bark from the mold. I sped up the setting process by putting the bark in the freezer for 30-60 minutes so the chocolate could harden quickly.
Directions:
Chocolate layers: Melt 1 and 3/5 cups of chocolate chips in a small saucepan on low heat, stirring constantly. Once chips are completely melted, pour them into the silicone bark mold and use a spatula to spread the chocolate into an even layer. Allow chocolate to harden before placing the next layer of peppermint cream.
Peppermint Cream Filling: Use a mixer to combine vanilla and peppermint extracts, butter and marshmallow fluff until well mixed. Add sugar to the mix cup at a time and continue to beat ingredients on low speed for several minutes until it is completely mixed. Use a spatula to evenly spread the peppermint cream filling onto the first chocolate layer in the bark mold.
Melt the remaining chocolate chips and use a spatula to evenly spread the chocolate on top of the peppermint cream layer. Allow chocolate to harden before removing the bark from the mold.
Cut peppermint patties bark into pieces and enjoy! Store in a cool place (I keep mine in the freezer).
