Easy Mac & Cheese Casserole Recipe

Casseroles can sometimes get a bad rap. Reality is, a good casserole can be a mom’s best friend. They make easy meals, can be prepared ahead of time, and can usually be frozen for convenient meals on busy weeknights.  A delicious casserole recipe is worth passing along, which is why I want to share my take on an Easy Mac & Cheese Veggie Chicken Casserole from Country Crock.

Another one of the beautiful things about casseroles is that you can usually substitute and/or leave out non-key ingredients. You can take a basic recipe like the one above and make it your own…you could make it with different ingredients every night of the week and never have the same casserole twice. Casseroles are a great way to use ingredients you already have on-hand in the pantry and refrigerator.

My take on the original recipe: I used about 4 cups of chopped green beans because I had a bunch that needed to be used. I also seasoned my cooked pasta to taste with garlic salt, pepper and 2 T. Salad Supreme seasoning.

The original recipe’s topping calls for 1 T. grated Parmesan to mix in with plain bread crumbs and Country Crock spread. I used Italian bread crumbs and left out the Parmesan cheese.

    This looks like something everyone in the family would like. Meat and the kids favorite macaroni and cheese all together makes a good supper. thanks for the recipe
