Mexican Beef & Corn Casserole Recipe

Busy weeknights call for quick and easy meals. This Mexican Beef & Corn Casserole fits the bill. It’s ready to serve in about half an hour from start to finish. My family ate this a couple of times last week. I served it different ways so they didn’t even realize they were eating leftovers! I’ll be sharing my secrets with you below. 

The original recipe as listed comes from the Country Crock website. I made minor changes that I’ll tell you about in case you want to try them at your house. I also have serving suggestions so when you feed this to your family more than once in a week they will be sure to eat the leftovers (if you have any)!

When I make this Mexican Beef & Corn Casserole, I add a packet of Taco Seasoning to the ground beef as I’m browning it. This helps add a spicy flavor to the meat. We like it that way! I also used a homemade salsa. And last, I used a can of pinto beans instead of black beans and added a cup of sliced black olives.

Serving Suggestions and Ideas:

The first time I served this casserole, we ate it with tortilla chips. You could also spoon this casserole into a tortilla and eat it like a burrito.

A few days later, I served this as leftovers in taco salad form. I heated it up, tossed it with a green salad and crushed Doritos, and added a little bit of Italian dressing to taste. It looked and tasted totally different from the original meal – so no complaints about eating “leftovers” from the family!

    I would like to try the upside down hot turkey sandwich casserole, it sounds a little different than the usual casserole.
