I am on a quest to find great homemade bread recipes – FOUND ONE! Try this one out with your family the next time you want some fresh Honey Oat homemade bread.
The recipe:
2 Tbs. Instant Yeast
3 cups Boiling Water
1 cup of Quick Oats OR a 4 Grain Cereal Mix (I use a 7 grain mix)
3/4 cup Honey
1/2 cup butter
1 Tbs. Salt
6 1/2 cups of Flour Unbleached (I mix my flour with spelt, kamut, and white wheat – it works)
1/4 cup of Vital Wheat Gluten
2 Tbs. of Dough Enhancer
2 Large Eggs
In a large mixing bowl combine water, oats, honey, butter & salt. Add eggs. Cool a little then begin to add 2 cups of flour, yeast, vital wheat gluten, and dough enhancer. Add remaining flour or until you have moderately stiff dough. Mix until smooth if using a mixer or knead dough until elastic.
Let dough rest and rise. Punch dough down, form into loaves. Raise and bake at 350 degrees for about 30-35 mins or until tapped and sounds hollow.
Makes 2 (1 lb) loaves and about 8 rolls. My kids love rolls as sandwiches, so next time I might make more rolls and less bread loaves.
Note: I put my dough in the loaf pans and let rise in my warm oven (turned off) for about 30 minutes. I don’t punch it down, I go ahead and bake it as is. Works for me!

I am going to try to make this bread! I was wondering what the advantage is of the Vital Wheat Gluten..is there a nutritional benefit and do you find it at the local grocery store or health food store?

Short answer to your question is that yes, vital wheat gluten adds protein. There are also other benefits to your bread such as better texture, improved color and taste, and more I listed in my blog post.
You should be able to find it in the grocery stores, mine usually stocks it in the natural foods section. My mom found it there in your town, I will have to ask her which grocery store and email you.
