Kale and Apple Potato Salad Recipe

It’s unanimous. A summer party is not a summer party without the potato salad! I like to try new things, so this summer I plan to mix it up a bit. Instead of old-fashioned potato salad, I will be serving a unique Kale and Apple Potato Salad made with MIRACLE WHIP. The one-of-a-kind sweet and tangy taste of MIRACLE WHIP gives potato salad a taste everyone will love.

What is your go-to potato when it comes to making a potato salad? Here’s a tip to help you make the best potato salad ever. Trust me, your taste buds are going to love this: Switch to New Potatoes. They have a waxy texture that helps them retain their shape after cooking. This makes them perfect for using in salads. And the best part to me is that New Potato skins are so tender, you don’t need to peel them! This saves me time in the kitchen – I can go out and enjoy the party with everyone else.

MIRACLE WHIP KALE & APPLE POTATO SALAD

PREP TIME: 20 min. | TOTAL TIME: 4 hr. 20 min. | MAKES: 10 servings, 1/2 cup each

WHAT YOU NEED:

  • 3/4 cup MIRACLE WHIP Dressing
  • 1 Tbsp. GREY POUPON Dijon Mustard
  • 2 tsp. cider vinegar
  • 2 lb. new red potatoes, cut in quarters, cooked & cooled
  • 4 cups coarsely chopped kale
  • 1/2 cup thinly sliced red onion
  • 2 apples, cored and diced

MAKE IT:

MIX dressing, mustard and vinegar until blended.
COMBINE remaining ingredients in large bowl; Add dressing mixture; mix lightly.
REFRIGERATE several hours or until chilled.
*Tip: Sprinkle with poppyseeds or diced, cooked bacon, if desired.

    This looks like a wonderful summer salad. Our family eats a lot of salad but primarily during the summer months. I will be trying this one out.

    This is a very nice recipe for Potato salad and I like the ingredients. I am going to make this for the 4th of July. I like Miracle Whip because it gives and nice tangy taste. Thanks for sharing.

    Love the ingredients. Easy to make & follow recipe. And I love kale! Love it on a grilled burger. Great recipe for memorial day weekend. Like that this has red potatoes.

    I love Kale! This definitely looks tasty and healthy too. I have never used miracle whip but it would be great to try it.

    This salad looks delicious and I have used miracle whip in my potato salads for years. The only thing that really makes it taste the way it should. Not that summer is here and we BBQ a lot, this would be a perfect salad to make.

    I grew up with miracle whip in the house. My husband states he hates it so I haven’t bought it for 30 plus years. He has been cooking kale and other healthy items. I think I am going to buy some miracle whip and make this and not say anything about it and see what he thinks!!!! This sounds good and healthy too. I am going to pin it so I have it. Thanks!!
