I received a bunch of fresh green asparagus and wasn’t quite sure what to do with it! It’s not a vegetable I normally serve, although I do like to eat it. I love all vegetables, though. My kids are a bit more picky than I am – but I’m on a mission to expand my family’s vegetable horizons.
Here’s a quick and easy asparagus recipe that we recently enjoyed. I cut the baked asparagus into bite-sized pieces for the kids and they thought they were eating green beans!
Easy Asparagus Recipe
Ingredients:
1 bunch of asparagus
Garlic Salt and Pepper (to taste)
Olive Oil
Directions:
- Wash one bunch of asparagus and trim the bottoms about 2 inches. Line a baking sheet with aluminum foil (for easy cleanup) and place the asparagus in a single layer on the sheet.
- Drizzle olive oil on the asparagus and sprinkle with garlic salt and pepper to taste.
- Bake in a 400 degree oven for 20 minutes and serve.

Thank you both for the tips. I had an asparagus bunch this evening. I steamed mine and wasn’t sure if I wanted anything to top them or not. I am trying not to “fatten” up my veggies. I opted to sprinkle them with some grated Parmesan cheese which added some saltiness. I think a dab of olive oil would help the Parmesan cheese stick a little better though.

Hi Lorrie, You’re right about the oil helping stuff stick on the asparagus – that’s what held the salt and pepper in place. I was reading an article yesterday that suggested a good way to cut calories and it said to use an oil spritzer. I thought that was a good way to get a bit of oil on veggies without dousing them.

Sounds yummy. I use pretty much the same ingredients but grill them on the stovetop. And instead of trimming the aspargus, you can just “snap” it. Where it naturally breaks is where its the tastiest 🙂
