This recipe comes in handy when I need a quick and easy lunch that my kids love to eat. You can adjust the amount of ingredients to suit your own preferences and/or use the vegetables you have on hand in your kitchen. This is what works best for us.
Quick & Easy Ham Fried Rice
2-3 eggs
½ onion – finely chopped
1 cup shredded carrots
1 cup frozen peas (cook according to package directions in the microwave)
1 cup cubed ham (or ham cut into small pieces)
3 cups cooked rice
Soy sauce to taste
2 olive oil
Directions:
1. Scramble eggs and set aside.
2. Heat oil in frying pan until hot. Add onion, carrots, and ham. Cook until veggies are tender.
3. Add rice, cooked peas and scrambled eggs and heat thoroughly (about 3 minutes – don’t forget to stir so it doesn’t stick to pan).
4. Add soy sauce to taste.
