Strawberry Baked Pancakes Recipe + Krusteaz Giveaway

My kids love it when we switch things up and have breakfast foods for dinner. They especially love pancakes and waffles. Our friends at Krusteaz sent us boxes of Buttermilk Protein Pancake Mix to help me prepare our Breakfast Night meal.

I have been wanting to try a pancake hack I heard about for baked pancakes in the oven. It makes pancakes super easy because you are basically making one big pancake in a 9×13 baking dish. Once the pancake is baked, you cut it into portion-sized squares to serve just like you would traditional pancakes.

Strawberry Baked Pancakes

Krusteaz Pancake Mix Recipes can be as simple as stirring water to the dry mix to make a pancake batter. But, since it’s fun to experiment and I had a bag of frozen strawberries just begging to be used, I added in a few extra ingredients for our Strawberry Baked Pancakes. The end result was light, fluffy pancake squares with chopped strawberries baked in. We drizzled our baked pancakes with maple syrup, and they were delicious!

You can easily change up the recipe by using a different kind of berry. Blueberries, raspberries, blackberries, or even a mix of berries would taste delicious in these baked pancakes. I used Krusteaz Buttermilk Protein Pancake Mix because I like the added protein boost: 13 grams per serving!

Ingredients
  • 2.5 cups Krusteaz Buttermilk Protein Pancake Mix
  • 2 Large Eggs
  • 1.5 cups Milk
  • 1/4 cup Unsalted Butter (melted and slightly cooled)
  • 2 Tablespoons Sugar
  • 3 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 2 cups Fresh or Frozen Strawberries, chopped
  • 2 Tablespoons Lemon Juice
  • Maple Syrup (for serving)

Instructions
  1. Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with nonstick cooking spray.
  2. In a medium mixing bowl, whisk to combine eggs, milk, lemon juice and butter. In a separate bowl, mix together the Krusteaz Pancake Mix, Sugar, Baking Powder, and Salt.
  3. Stir the dry ingredients into the wet mixture to mix well. Spread batter evenly in the prepared baking dish. Sprinkle the chopped strawberries evenly on top of the batter.
  4. Bake until a toothpick inserted in the middle of the pancake comes out clean; about 35 to 40 minutes depending on how quickly your oven bakes. To serve: Cut into squares and drizzle with maple syrup.

    I like waffles more, but pancakes are easier to cook, so I eat those more often.

    Well, I have to honest, I like waffles better. BUT, one of the reasons I don’t enjoy pancakes is I struggle to make them without burning them, as I can’t seem to pour them all the same size so they all get done at the same time. This recipe looks like it would eliminate that problem. Maybe pancakes will win out in the future!

    We love pancakes and I regularly use Krusteaz mix.I also add 1/2 cup of buckwheat flour to the pancake mix to make it healthy ;). I should try this protein buttermilk variety. Baked pancake recipe looks delicious, too. Such an easy hack to prepare a meal in one go. #HomeMattersParty

    Well, I DO live in the Winter Strawberry Capital of the World (across the road from a strawberry field), and The Florida Strawberry Festival is actually currently happening in our town, so I guess I just need to make these.       There’s definitely no excuses when you have strawberries growing in your yard. 🙂 You are so lucky! I tried so hard to get my strawberries to grow last year, and I came up with about THREE. But, I think that my neighbor’s rabbit may have helped himself to some. I was always catching him in my garden when he escaped his cage. LOL The Strawberry Festival sounds like a lot of fun.
