Chocolate Covered Banana Granola Pops

Chocolate covered bananas, dipped in banana granola to make delicious frozen banana granola pops.

Banana Granola Pops are such a fun after school snack for the kids – or anytime snack for Moms. They are so good! By the time the melted chocolate has the time to harden around the banana (it only takes about a minute!), the frozen banana has softened enough to start eating. Chocolate, Viki’s Granola Banana Walnut Granola clusters and frozen bananas are such a yummy combination.

Ingredients
  • 4 Bananas
  • 3 Tablespoons Viki's Banana Walnut Granola
  • 6 ounces Chocolate Chips
  • 8 Popsicle Sticks or Cake Pop Sticks

Instructions
  1. Peel, cut bananas in half crosswise and insert Popsicle sticks. Place on a parchment-lined tray, cover with plastic wrap and freeze for about 3 hours.
  2. Place Viki's Banana Walnut Granola into a shallow dish. Melt chocolate in a microwave safe bowl on high for 1 minute. Stir and microwave another 30 seconds. Once chips are melted completely, dip each banana into the chocolate (use a spoon to help spread the chocolate.) Immediately roll the chocolate dipped banana in the granola. Place on a parchment-lined tray. Serve immediately or wrap individually in parchment paper or plastic wrap in the freezer.

To freeze bananas on a stick: Peel bananas, slice in half and insert a cake pop stick or wooden popsicle sticks. Lay the bananas down flat in a single layer on a baking sheet and cover with foil or plastic wrap. Freeze for at least 3 hours.

      Thanks, Crystal! I also made these sliced smaller into bite-sized bananas and dipped them in chocolate before rolling in granola. No sticks necessary and they are a yummy snack eitheri way. 🙂 Thank you for stopping by and for your comments. –Nicole
