Chocolate covered bananas, dipped in banana granola to make delicious frozen banana granola pops.
Banana Granola Pops are such a fun after school snack for the kids – or anytime snack for Moms. They are so good! By the time the melted chocolate has the time to harden around the banana (it only takes about a minute!), the frozen banana has softened enough to start eating. Chocolate, Viki’s Granola Banana Walnut Granola clusters and frozen bananas are such a yummy combination.
The following recipe directions are slightly modified from the Banana Granola Pops recipe found at VikisGranola.com
- 4 Bananas
- 3 Tablespoons Viki's Banana Walnut Granola
- 6 ounces Chocolate Chips
- 8 Popsicle Sticks or Cake Pop Sticks
- Peel, cut bananas in half crosswise and insert Popsicle sticks. Place on a parchment-lined tray, cover with plastic wrap and freeze for about 3 hours.
- Place Viki's Banana Walnut Granola into a shallow dish. Melt chocolate in a microwave safe bowl on high for 1 minute. Stir and microwave another 30 seconds. Once chips are melted completely, dip each banana into the chocolate (use a spoon to help spread the chocolate.) Immediately roll the chocolate dipped banana in the granola. Place on a parchment-lined tray. Serve immediately or wrap individually in parchment paper or plastic wrap in the freezer.
