One of my favorite fall flavors is Pumpkin Spice (isn’t everyone’s?!) The recipe for Pumpkin Spice Caramel Corn found below is perfect for Fall snacking.
Everyone in my family loves homemade caramel corn. Caramel popcorn is especially good right after it gets made. You’re really supposed to wait for the caramel to cool so that the caramel hardens up a bit. But we can never wait that long at my house. Caramel corn is soooo yummy while it’s warm and gooey.
After eating all that sweet popcorn goodness, it is important to remember to care of our teeth. I have to make sure my kids brush their teeth extra good after eating caramel corn. We like to brush with Crest toothpaste.

- 1/2 cup Butter, cut into tablespoons
- 1 cup Light Brown Sugar, Packed
- 1/4 cup light corn syrup
- 1 teaspoon Baking Soda
- 1 Tablespoon Pumpkin Pie Spice
- 1 teaspoon Vanilla or Vanilla Extract
- 8 cups Plain Popcorn, popped (2 bags of microwave popcorn)
- Spray a 6-quart slow cooker with cooking spray. Line a baking sheet with wax paper and set aside.
- Add butter, brown sugar, and corn syrup to the bottom of the slow cooker. Cover and cook on High heat setting for 30 minutes. Then, carefully remove the slow cooker's ceramic insert and rotate it one-half turn (180 degrees.) Continue to cook on High heat for another 30 minutes or until caramel mixture is bubbling around the edges.
- Remove the slow cooker's cover and turn heat setting to Low. Stir in baking soda, pumpkin spice, and vanilla until well blended. The mixture will foam while being stirred. Add popcorn 1-2 cups at a time and carefully stir to coat popcorn with the caramel mixture. Be sure to scrape the bottom and sides of the slow cooker.
- Continue to cook, uncovered, on Low heat setting for 30 minutes to an hour, stirring well every 10 minutes. Be sure to stir all the way down to the bottom of the slow cooker to avoid burnt caramel corn.
- Spread popcorn out onto the lined baking sheet and allow to cool 15 minutes. Store at room temperature in an airtight container.
