See cucumber salad in a whole new way when you slice cucumbers with a vegetable spiralizer. Delicious cucumber spirals are tossed with cherry tomatoes, feta cheese, kalamata olives and pepperoncinis.
I have been curious about vegetable spiralizers ever since the word Zoodles hit the internet. Here’s the gist of what I have learned so far: Zoodles are vegetables (commonly zucchini) that have been sliced into long, noodle-like strings with a kitchen gadget called a spiralizer. The catchy cool part is that veggie noodles (Zoodles) are a low-carb alternative to traditional pasta AND are so fun to eat that everyone, including kids, tend to eat more vegetables.
Before I bought my spiral slicer, I read a lot of spiralizer reviews and decided to start out with a handheld spiralizer instead of a tabletop spiralizer. I found a spiralizer with a majority of good reviews that: 1) cost under $15 and 2) did not take up much room in my kitchen.
I have a small kitchen and must choose my kitchen gadgets wisely. I bought the OXO Good Grips Handheld Spiralizer and it easily fits in a kitchen drawer. I figure that if I end up needing something bigger, I can always go back and invest in something more heavy duty like a tabletop spiralizer. So far, the OXO handheld spiralizer is working out great for me. I like to experiment with different veggies and healthy spiralizer recipes.
I have used the OXO Good Grips handheld spiralizer several times on cucumbers, zucchini and yellow squash. To make it work, all you do is stick the vegetable into the slicer side and twist. Long strips of vegetable noodles fall out of the other side of the slicer. You can see the OXO spiralizer’s actual size in my photo:
It’s fun to spiralize vegetables! Cucumbers are easy to spiralize because of their size and shape. One of the first cucumber recipes I made was a Greek Salad with spiralized cucumber noodles. It’s a cucumber recipe worth sharing with you because it something I would make definitely make again. The cucumber noodles look so pretty tossed in this colorful salad made with tomatoes, olives, feta cheese and pepperonicis. Most importantly, it tastes really good.
I made this salad with Olive Garden Italian Dressing, but you can use your favorite Italian or Greek salad dressing. It’s also easy to add more of your favorite ingredients to the salad. I love feta cheese, so I made sure to put a little extra in there.
Cucumber Salad Recipe: Spiralized Cucumber Greek Salad
- 2 cucumbers
- 6 ounces feta cheese crumbles
- 12 pepperoncini slices
- 1/2 cup kalamata olives
- 1/2 cup cherry tomatoes, halved
- 1/3 cup Greek or Italian Salad Dressing
- Spiralize cucumbers and lay the noodles down on two layers of absorbent paper towels. Cover with another layer of paper towels, and gently press to absorb the moisture. Cucumbers are 95% water, so you must do this important step to avoid a watery salad.
- Toss together cucumbers, tomatoes, olives, feta cheese, pepperoncinis and salad dressing in a medium-sized bowl until dressing is evenly distributed. Serve immediately.
