How do you celebrate St. Patrick’s Day? It’s pretty low-key here at my house. I make sure the kids wear green to school so they don’t get pinched. BTW, I think pinching is the WORST tradition EVER for a holiday! Ouch!
We’re keeping our celebration simple with an Irish corn beef dinner made in the Instant Pot and Lime Sherbet Rainbow Floats for St. Patrick’s Day dessert. It’s fun to have an excuse to eat sweet treats.
One nice thing about St. Patrick’s Day floats is that they are so easy to make, even at the last minute. In fact, you don’t want to make them ahead of time or they will melt. The only prep you need to do is make sure you have the ingredients: Lime Sherbet, Sprite (or your favorite Lemon-Lime flavored soda), and Rainbow Airheads Extreme candy belts.
If for some reason you can’t find the Rainbow Airhead Extreme candy, you can sprinkle another rainbow-colored candy like Skittles on top of the Lime Sherbet Floats. Or, you can simply leave out the rainbow. GREEN is the official color of St. Patrick’s Day so this Lime Sherbet recipe works with or without the rainbow.

- 2-3 scoops Lime Sherbet
- 4 ounces Sprite (or Lemon-Lime Flavored Soda)
- 1 candy belt Rainbow Airheads Extreme Candy
- Add Lime Sherbet to a glass, then slowly add Sprite to fill up the cup so the sherbet can "float." Top with a Rainbow candy belt. Serve immediately.
Don’t forget to wear something green on St. Patrick’s Day so you don’t get pinched!
