Gluten Free Chocolate Coconut Macaroons Recipe

Macaroons made with coconut and dipped in chocolate are a classic cookie. I have partnered with Honey Bunches of Oats to share this delicious macaroon recipe.

We eat a lot of cereal at my house. Boxes and boxes every week. My four boys don’t eat cereal just at breakfast time. Cereal is almost always part of their after school and pre-bedtime snacks. They loved eating Honey Bunches of Oats Chocolate cereal made with real cocoa. I will buy it again for all of us to enjoy.

If you are looking for a delicious gluten free cereal, you will definitely want to give this one a try. The light sweet taste of honey and the crunchy chocolatey clusters you know and love tastes especially good with milk!

Turning cereal into a macaroon was a lot easier than I thought. This was the first time I had ever tried to make macaroons. Luckily, the recipe is easy to follow. You’d never guess that one of the main ingredients in this Chocolate Coconut Macaroons recipe is a breakfast cereal. Honey Bunches of Oats Chocolate cereal is lightly crushed up and combined with shredded coconut to put a fun twist on the classic macaroon.

I ate one of the macaroons right out of the oven and it was really good, even without being dipped in melted chocolate! Once the macaroons had time to cool completely on the baking rack, I dipped the bottoms into melted chocolate and let the chocolate set completely before tasting them again. Of course, the additional chocolate makes them even more delicious.

Chocolate and coconut are one of my favorite flavor combinations, so I really enjoyed eating these easy to make macaroons. If you are a fan of chocolate and coconut, I think you will really like them, too. Give this recipe a try and let me know what you think.

Ingredients
  • 3 Large Egg Whites
  • 1/2 cup Sugar
  • 1/4 teaspoon Salt
  • 3 cups Sweetened Shredded Coconut
  • 1 cup Honey Bunches of Oats Chocolate Cereal, lightly crushed
  • 1 cup Semi-Sweet Chocolate Chips
Servings: Macaroons
Instructions
  1. Heat oven to 350 degrees F. Like baking sheets with parchment paper; set aside.
  2. In a large bowl, whisk together egg whites, sugar and salt until very frothy. Fold in coconut and cereal until moistened.
  3. Drop mixture into 2 inch rounds on prepared baking sheets. Bake until lightly golden, about 15 minutes. Transfer to wire rack to cool completely.
  4. Using a microwave safe bowl, melt chocolate chips in microwave in 30-second intervals, stirring in between, until smooth. (About 1-2 minutes total.)
  5. Dip bottom part of macaroons into melted chocolate and place on parchment paper. Cool in refrigerator for 30 minutes or until set.
