My kids love to snack. I am always on the lookout for nutritious snack ideas my kids will actually want to eat. This peanut butter and chocolate No Bake Energy Bites Recipe was an instant hit at my house. Between the kids, my husband and myself, we snarfed all the energy bites down so fast my kids were asking me to make more the very next day!
No problem — no bake energy balls are easy to make. They are packed with protein from peanut butter, oats and ground flax seed. (I love using ground flaxseed, it adds so many nutrients and the kids never suspect a thing!) They also have yummy toasted coconut flakes, and are sweetened with real honey.
Yes, there are a few chocolate chips tossed in there. You can leave them out if you want chocolate-free peanut butter protein bites. Either way, this no bake energy bites recipe is a keeper. Give it a try and let me know what you think.

These no bake energy balls are a delicious and nutritious snack, packed with protein from peanut butter, oats and ground flaxseed.

- 1 cup Old-Fashioned Oats (dry)
- 2/3 cup Toasted Coconut Flakes
- 1/2 cup Crunchy Peanut Butter
- 1/2 cup Ground Flaxseed
- 1/2 cup Milk Chocolate or Semisweet Chips optional
- 1/3 cup Honey
- 1 tsp Vanilla
- Mix all ingredients together in a bowl. Cover and chill in the refrigerator for at least 30 minutes.
- Once the mixture is chilled, use your hands to roll into balls (about 1 inch rounded size.)
- Store in an airtight container for up to one week.
How To Toast Coconut Flakes: Place a thin layer of coconut flakes on a baking sheet in a 325 degree oven for 5 to 10 minutes. Toasting coconut flakes really brings out the coconut flavor. Allow them to cool completely before using in the energy balls recipe.

This energy bite recipe looks fantastic! I’m really not a fan of coconut, though. Is there something that you think I could sub for the coconut flakes, or could I leave it out and still have success?

I haven’t ever tried it though, so I don’t know an exact measurement of oats to add in place of the coconut, but probably about the same (2/3 cups). Have a great weekend! –Nicole
