Turkey Cranberry Spring Mix Salad Recipe

Summers are the perfect time to pack a salad lunch. One of my favorite green salads is a Turkey Cranberry Spring Mix Salad. Thanks to our friends at Eco Lunchbox, I can easily take a salad for lunch in their new Seal Cup containers.

Turkey Cranberry Spring Mix Salad Recipe with Raspberry Vinaigrette

I toss all the turkey salad ingredients together in a Large Seal Cup by Eco Lunchbox. Then, I pour a little bit of Raspberry Vinaigrette in a Small Seal Cup, and my salad lunch is ready to go. Don’t forget to bring a fork! (I have done that before and let’s just say it is much easier to eat a salad with a fork than with your fingers.)

Okay, maybe not forever, but I have a few other Eco Lunchbox stainless containers still going strong after years of use. I always wash our Eco Lunchbox containers in the dishwasher, too! They are definitely sturdy and made to last.

The Seal Cups are my first Eco Lunchbox containers with a silicone lid. They are amazingly leak-proof and free of plastic, BPA, and phthalates. All parts are dishwasher and oven safe.

Grab your Seal Cup containers, and give this Turkey Cranberry Spring Mix Salad recipe a try. It’s one of my salads EVER. I love that I can make it myself instead of having to go out for a restaurant salad.

Below, I have listed the amount of ingredients I use to pack a salad in the Eco Lunchbox Large Seal Cup (20 ounce.) Feel free to tweak the recipe to fit your taste.

I LOVE lots and lots of Feta cheese, but if you aren’t a fan of Feta, you can substitute shredded Mozzarella. Either way is delicious!

Ingredients
  • 2 cups Spring Mix Salad
  • 2 slices Deli Turkey, Diced
  • 3 Tablespoons feta cheese crumbles
  • 1 Tablespoons Dried Cranberries
  • 1 Tablespoons Sunflower Kernels (Roasted and Salted)
  • 1 Tablespoons Red Onion, Sliced Thin
  • 1-2 Tablespoons Raspberry Vinaigrette Salad Dressing
Servings: serving
Instructions
  1. Toss all salad ingredients together (except for the Raspberry Vinaigrette.)
  2. When ready to eat, drizzle the Raspberry Vinaigrette on top of the salad mix.
