Summers are the perfect time to pack a salad lunch. One of my favorite green salads is a Turkey Cranberry Spring Mix Salad. Thanks to our friends at Eco Lunchbox, I can easily take a salad for lunch in their new Seal Cup containers.
I toss all the turkey salad ingredients together in a Large Seal Cup by Eco Lunchbox. Then, I pour a little bit of Raspberry Vinaigrette in a Small Seal Cup, and my salad lunch is ready to go. Don’t forget to bring a fork! (I have done that before and let’s just say it is much easier to eat a salad with a fork than with your fingers.)

Below, I have listed the amount of ingredients I use to pack a salad in the Eco Lunchbox Large Seal Cup (20 ounce.) Feel free to tweak the recipe to fit your taste.
I LOVE lots and lots of Feta cheese, but if you aren’t a fan of Feta, you can substitute shredded Mozzarella. Either way is delicious!

- 2 cups Spring Mix Salad
- 2 slices Deli Turkey, Diced
- 3 Tablespoons feta cheese crumbles
- 1 Tablespoons Dried Cranberries
- 1 Tablespoons Sunflower Kernels (Roasted and Salted)
- 1 Tablespoons Red Onion, Sliced Thin
- 1-2 Tablespoons Raspberry Vinaigrette Salad Dressing
- Toss all salad ingredients together (except for the Raspberry Vinaigrette.)
- When ready to eat, drizzle the Raspberry Vinaigrette on top of the salad mix.
