Must Try Spring Salad Recipe Roundup

Spring is here! I love it because warmer temperatures outside make me crave lighter foods like salad. I rounded up five of my favorite Must Try Spring Salad Recipes from RecipeRehab.com. Why settle for just lettuce topped with salad dressing? That’s boring! Salads can be an exciting way to eat delicious foods in a new way.

    My Honey/Hubby has (bonfire of my astonishment!) REALLY kept his New Year’s Resolutions this year: namely to lose weight and get healthy by eating right and getting plenty of exercise. He’s very athletic so exercise was never the problem for him. But his eating habit were THE WORST to the point that he had gained 60 lbs since we got married and was becoming downright scared (high BP, cholesterol etc.)

    But he took a course (a FREE online computer – actually taught by professionals at Berkeley – with homework, tests etc and no nonsense about the science of food, diet and nutrition. He’s been eating great, lost 50 lbs and feels (and LOOKS!) fabulous.

    Anyway, we have been eating A LOT OF SALADS. It’s getting easier to be creative as the seasonal produce starts to appear.

    One of favorites is the BLT Salad. I do use a low sodium Turkey bacon and add sliced or diced chicken with lots of mixed greens, grape tomatoes and a light Caesar or Italian vinaigrette (sometimes for special I’ll add a spoonful or two of lowfat Olive Oil Mayo. YUM!

    I love salads,and these all look great.I want to try the Cucumber and Black-eyed Pea Salad.I’ve never tried black-eyed peas in a salad before.

    All of these look yumscious! We will try all of them. We eat salads year-round because we know it is important to have fresh veggies and fruit on a daily basis, and they are super-easy for our lunches.

    They all look so good . I really love salads , I wouldnt know which one to eat first.
    I can eat salads all year round and they are good for you

    I love salads, and I do crave them more in the spring and summertime. My favorite is a spinach salad with strawberries and mandarin orange. I don’t even like dressing on that one!

    These look so yummy! I love to eat salads especially in the Spring and Summer. My favorite salad is fruit salad but i also enjoy Steak salads, Caesar salads among many others. Thank you for sharing such a delicious post.
