My kids have eaten peanut butter and jelly sandwiches pretty much every day this summer. So when I told them we were going to change things up by making a Strangewich recipe, they got a little confused. What in the world is a Strangewich? It sounds like something weird, and it is weird… deliciously weird!
We picked out two of our favorite Strangewich sandwich recipes, the Waffle Club and the Grilled Cheese & Veggie. The kids think it is so cool to use waffles instead of bread for a sandwich. We have so much zucchini and yellow squash growing in our garden, I just know the Grilled Cheese & Roasted Veggies Strangewich will be a delicious way to put those vegetables to good use.
We went to Smith’s grocery store to buy some of the ingredients we didn’t already have on hand: frozen waffles, bacon, avocados and Best Foods® Real Mayonnaise. The Best Foods® Real Mayonnaise Squeeze bottles are so convenient. They make it easier to prepare sandwiches with less mess.
First up is the kids’ fave: Waffle Club Strangewich. It was fun to build this tower of a waffle sandwich! We stacked up layers of waffles, avocado, bacon, cheese, maple Mayonnaise and even a fried egg. Nobody’s mouth was big enough to take a full-sized bite out of this tall and tasty sandwich, but everyone had a hilarious time trying. This Strangewich recipe is a winner.
- 1/4 cup Best Foods® Real Mayonnaise
- 2 Tbsp + 2 tsp Maple Syrup
- 12 Frozen Waffles, prepared according to package directions
- 1 Avocado, sliced
- 8 slices Bacon, cooked crispy
- 6 slices Cheddar Cheese
- 4 Fried Eggs
- Combine Best Foods® Real Mayonnaise with maple syrup, set aside.
- Evenly top 4 waffles with avocado and bacon. Place another waffle on top, and evenly spread a layer of mayonnaise mixture. Evenly top with cheese, fried eggs and remaining bacon. Top with a waffle.
Who knew that roasted zucchini and yellow squash on a grilled cheese sandwich would taste so good?!?! I sure didn’t know before this Strangewich recipe came along. The Roasted Veggies & Grilled Cheese Sandwich is going to make regular appearances on my dinner table from now on.
- 1 Tablespoon Best Foods® Real Mayonnaise
- 2 slices Whole Grain Bread
- 1 slice White Cheddar Cheese
- 1 cup Sliced, Roasted Vegetables (Zucchini and Yellow Squash)
- Spread one slice of bread with Best Foods® Real Mayonnaise. Place bread mayonnaise-side down onto a hot skillet. Top with cheese and roasted vegetables.
- Spread other slice of bread with Mayonnaise and place it Mayonnaise-side up on top of the vegetables.
- Cook until lightly browned on one side. Flip the sandwich over and cook until cheese is melted.
TIP: To roast vegetables, preheat oven to 450 degrees. Brush sliced vegetables with olive oil and season to taste with salt and pepper. Roast vegetables in a single layer on a baking sheet in the oven for 15-20 minutes until tender.
Getting creative in the kitchen is one of my favorite ways to spend time with my kids. We had such a great time making our Strangewich sandwich ideas together. I am sure we will do it again before the summer is over and the kids head back to school.
