Summer Desserts: Layered Yogurt and Gelatin Squares

Yogurt and Gelatin Dessert

Layer Yogurt and Gelatin for colorful, crowd-pleasing summer desserts!

Yogurt isn’t just for breakfast anymore! My kids and I eat a lot of yogurt – especially on hot summer days. Cool yogurt is a refreshing and wholesome snack. Have you heard of the Yoplait® drinkable yogurt “hack” yet? I tried it and it really works!

I don’t know why I had never thought about making drinkable yogurt out of regular yogurt. Here’s how: Remove a spoonful or two of yogurt out of the yogurt cup and add a tablespoon full of milk to the cup. Stir and it is ready to sip! You can add more milk if you like a thinner consistency. I put the Yoplait foil lid back on and stick a straw through it. My kids like for me to serve it that way.

I even found a way to add yogurt to a classic gelatin dessert. Light and refreshing Layered Yogurt and Gelatin Dessert Squares is a fun summer dessert idea everyone in the family will enjoy.Yoplait Yogurts add a creamy deliciousness and bits of real fruit to the colorful gelatin layers. A simple dessert to make, it just requires a little bit of time to set in between layers.

Change up the gelatin colors and yogurt flavors for a dessert that matches any occasion. Need a Fourth of July dessert idea? Use Red, White and Blue gelatins and coordinating Yoplait yogurts as listed in the recipe below.

Layered Yogurt and Gelatin Dessert Squares

Ingredients:

BLUE LAYER:

  • 2 cups boiling water
  • 1 box (6 oz) berry blue flavored gelatin for blue layer
  • 1 (6 oz) Yoplait® Original Mountain Blueberry yogurt
  • 2/3 cup cold water

WHITE LAYER:

  • 2 cups boiling water
  • 1 box (6 oz) pina colada flavored gelatin for white layer
  • 1  (6 oz) Yoplait® Original French Vanilla yogurt cup
  • 2/3 cup cold water
  • 2 cups boiling water

RED LAYER:

  • 1 box (6 oz) strawberry flavored gelatin
  • 1 (6 oz) Yoplait® Original Strawberry yogurt cup
  • 2/3 cup cold water

Directions:

1.  BLUE LAYER: In medium bowl, stir 2 cups boiling water into berry blue gelatin until gelatin is dissolved. In another medium bowl, slowly stir 1 cup of the berry blue gelatin into Mountain Blueberry yogurt. Pour yogurt mixture into 13×9-inch glass baking dish. Refrigerate about 1 hour or until set. Stir 2/3 cup cold water into remaining berry blue gelatin; let stand at room temperature.

2. When Mountain Blueberry yogurt layer is set, carefully pour plain berry blue gelatin over yogurt layer. Refrigerate about 30 minutes or until set.

3. WHITE LAYER: In medium bowl, stir 2 cups boiling water into pina colada gelatin until gelatin is dissolved. Stir in 2/3 cups cold water and French Vanilla yogurt. Pour yogurt and gelatin mixture over layer of berry blue gelatin. Refrigerate 30 minutes or until set.

4  RED LAYER: In medium bowl, stir 2 cups boiling water into cherry gelatin until gelatin is dissolved. In another medium bowl, slowly stir 1 cup of the cherry gelatin into Orchard Cherry yogurt. Pour yogurt mixture over white yogurt/gelatin layer. Refrigerate about 30 minutes or until set. Stir 2/3 cup cold water into remaining cherry gelatin; let stand at room temperature.

6 When Orchard Cherry yogurt layer is set, carefully pour plain cherry gelatin over yogurt layer. Refrigerate at least 2 hours until set.

HELPFUL TIPS:

Each of my layers set within 30 minutes, so the dessert may not take as long to prepare as suggested in the directions. Just be sure to test each layer and make sure it is completely set before adding a new layer.

You can make this dessert a day ahead of time. Cover with plastic wrap and store in the refrigerator until ready to serve.

Use a knife to cut this dessert into squares and a spatula to help lift the squares neatly out of the pan.

What do you think of this no bake dessert? What color combinations of gelatin and yogurt would you use? How often do you eat yogurt?
