You’ll Love This Flavorful Mediterranean Quinoa Salad Recipe

My family recently enjoyed a version of this flavorful quinoa salad for dinner. I used Kalamata olives instead of black olives and left out the walnuts. I found that you can also substitute couscous for the quinoa. I think that Feta Cheese is quickly becoming my favorite ingredient for salads these days – I love it! What about you?

Mediterranean Quinoa Salad Recipe

Ingredients:

2 cups cooked white quinoa;

1 cup grape tomatoes, halved;

½ cup diced cucumber;

½ cup black olives, pitted and chopped;

¼ cup walnuts, chopped

¼ cup feta cheese, crumbled (optional);

3 tablespoons extra virgin olive oil;

½ teaspoon  sea salt;

Pinch fresh ground black pepper;

1 teaspoon  dried oregano;

Juice of ¼ lemon

Directions: 

Add all ingredients to a bowl and mix well. Enjoy your healthy salad!

    I love salads so much I can eat them all the time. I have never eaten quinoa but I will read your other article saying what it is . They say its healthy for you so thats good.
    Im up to try any new foods atleast once

    Wow! I recently purchased some quinoa and wasn’t quiet sure what to do with it. This sounds delicious, and I bet that the whole family will like it!!!

    This salad looks delish – I have not used quinoa or couscous however I know how many health benefits they both have so I am inclined to buy the ingredients and make it this weekend!

    Yum! That looks delicious! I love both quinoa and couscous, so I’d be happy with substituting either one for this recipe! I really like the addition of the tomatoes, cucumber, olives and feta cheese! That’s a great Mediterrean assortment which I really enjoy together. And especially with the olive oil and seasonings added on top. Thanks for sharing the recipe and your experience!

    This is a very healthy and delicious salad. I would love to make this. I love the olives in the salad! Also it looks very filling and I could eat this and not have meat with it.

    Oh this looks yummy! Quinoa is so healthy … and the walnuts & olives are good forms of fat … plus they taste so good! I’ve done a similar version of this salad using black beans, quinoa and veggies … but I think your version would be a bit lighter. It somehow reminds me of spring/summer … maybe it’s just wishful thinking. 🙂 Thanks for sharing!
