The Instant Pot really lives up to the hype. I am still getting used to just how fast it can cook raw foods like chicken and other meat. My family is trying to eat at home more, so I am hoping this and meal planning will help me cook more of our meals. At the very least, I can use the Instant Pot for our weekly Taco Nights!

The Shredded Cilantro Lime Chicken is a good one, and useful. You can even leave out the cilantro and lime juice (just sub in some chicken broth for the juice) and cook plain shredded chicken. We use shredded chicken for tacos, salads and pasta dishes.
If you want to try a yummy cornbread recipe, check out my Cheddar Jalapeno Cornbread. It’s the cornbread you see in some of this blog post’s photos…and it’s delicious!
