This quick and easy bean soup recipe is perfect for chilly nights. It’s fast (ready to eat in under 15 minutes!) and filling. Easy Black Bean Soup has just 4 simple ingredients (make that 5 if you put cheese on top). It’s easy to keep all four of these ingredients on hand in the pantry.

What four ingredients do you need from your pantry to make this homemade soup? Black beans, vegetable broth, salsa and ground cumin. I like to garnish the heated soup with shredded Cheddar or Monterey Jack cheese from the fridge. *Note: For Halloween, I use cookie cutters to turn sliced cheese into ghost, pumpkin and bat shapes for the garnish. Black beans are a great source of protein, so you can feel good about putting some nutrition in everyone’s bellies before they go out Trick or Treating.
Easy Black Bean Soup Recipe
Serves 6-8
Ingredients
- 2 cans of black beans, undrained (15 oz)
- 1 can vegetable broth (16 oz)
- 1 cup salsa
- 1 tsp ground cumin
- Garnish: Shredded Cheddar or Monterey Jack Cheese
Directions:
- Combine 1 can of black beans, vegetable broth, salsa and cumin in a blender. Pulse for 30 seconds or until blended.
- Pour blended ingredients into a medium sized saucepan. Stir in the other can of black beans and heat on medium heat for 10 minutes, stirring occasionally.
- Remove from heat, pour into individual serving bowls and garnish with cheese. Serve.
