Easy Black Bean Soup Recipe

October 29, 2015 by Nicole

easy black bean soup

This quick and easy bean soup recipe is perfect for chilly nights. It’s fast (ready to eat in under 15 minutes!) and filling. Easy Black Bean Soup has just 4 simple ingredients (make that 5 if you put cheese on top). It’s easy to keep all four of these ingredients on hand in the pantry.

What four ingredients do you need from your pantry to make this homemade soup? Black beans, vegetable broth, salsa and ground cumin. I like to garnish the heated soup with shredded Cheddar or Monterey Jack cheese from the fridge. *Note: For Halloween, I use cookie cutters to turn sliced cheese into ghost, pumpkin and bat shapes for the garnish. Black beans are a great source of protein, so you can feel good about putting some nutrition in everyone’s bellies before they go out Trick or Treating.

Easy Black Bean Soup Recipe

Serves 6-8

Ingredients

  • 2 cans of black beans, undrained (15 oz)
  • 1 can vegetable broth (16 oz)
  • 1 cup salsa
  • 1 tsp ground cumin
  • Garnish: Shredded Cheddar or Monterey Jack Cheese

Directions:

  1. Combine 1 can of black beans, vegetable broth, salsa and cumin in a blender. Pulse for 30 seconds or until blended.
  2. Pour blended ingredients into a medium sized saucepan. Stir in the other can of black beans and heat on medium heat for 10 minutes, stirring occasionally.
  3. Remove from heat, pour into individual serving bowls and garnish with cheese. Serve.

Beans are an excellent source of protein. Canned beans are convenient to use in all your favorite recipes that call for beans. Keep them on hand so you’ll be ready to make homemade soup recipes like this one at a moment’s notice. Sometimes our family’s nights are so busy that it’s nice to get a nutritious meal put together and ready to serve in just a few minutes. Get creative using what you already have in your “cantry” to cook dinner.

According to Cans Get You Cooking research, 9 in 10 Americans use canned proteins like beans, chicken or fish. I like to keep canned black beans in my pantry for fast and easy recipes like this one for black bean soup. Don’t forget about Cantry Thursdays! We’ve all been there. It’s Thursday afternoon, you’ve picked the kids up from school and they’re asking, “What’s for dinner?” Searching for inspiration, you head to the refrigerator, only to realize that the groceries you bought on Sunday have run out or spoiled. But before the panic sets in and you reach for the takeout menus, remember that the solution for a wholesome, homemade meal is right in your pantry – or Cantry. With canned food staples like canned beans, chicken, broth and tomatoes on-hand, you can easily make it a Cantry Thursday night!
