It’s time to celebrate National Hamburger Month! I had the hamburger, but needed some inspiration for a quick and easy dinner to make. Before I went shopping, I checked for Ibotta rebate offers and unlocked a coupon for Hamburger Helper®. Then I headed to Walmart to see what kind of Hamburger Helper meal jumped out at me. Walmart has quite a large selection on the shelves.
The Cheesy Taco Hamburger Helper® sounded tasty to me, so I picked it up. Then I realized that a taco salad sounded like a good idea to me, too. I decided to buy a head of lettuce and use the Cheesy Taco Hamburger Helper® to make a fresh taco salad. Added bonus: The corn chips are already included in the Cheesy Taco Hamburger Helper® box. I love eating taco salad with corn chips.
It has been a long time since I have made Hamburger Helper® and I forgot just how easy it is. All I have to do is brown the ground beef, then add the seasonings and/or toppings included in the Hamburger Helper® box. We also like the Cheesy Italian Shells for a quick pasta dinner.
I noticed that on the back of the Hamburger Helper® box, there are “Add a Fresh Twist Ideas.” I used both of the suggestions for the Cheesy Taco meal, using fresh grated Cheddar and sliced jalapeno peppers as toppings. I added my own twist (remember my salad craving?) by serving the Hamburger Helper® on top of a bed of iceberg lettuce.
Our family dinner turned out very well if I do say so myself. Best of all, it was fast for me to make — about 30 minutes from start to finish.
Cheesy Taco Salad Hamburger Helper® Recipe
Ingredients:
- Cheesy Taco Hamburger Helper®
- 1 lb Lean Ground Beef
- 1 cup Milk
- 2 1/4 cups hot water
- 3/4 cup Cheddar Cheeese, grated
- 1 jalapeno pepper, sliced
- Iceberg lettuce, washed and prepped for salad
Directions:
1. BROWN beef in 10-inch skillet; drain.
2. STIR in 1 cup milk, hot water, Sauce Mix and Rice. Heat to boiling.
3. SIMMER. Reduce heat. Cover and simmer about 20 minutes, stirring occasionally, until rice is tender.
4. Remove from heat. Spoon beef over a bed of lettuce. Top with a layer of grated cheese, sliced jalapenos and Corn Chips. Serve.
