Springtime is here and I don’t know about you, but I have been enjoying the warm spring days, colorful new flowers, and greener grass. It’s definitely a breath of fresh air after a long, cold winter. I love spring and all it brings, including the opportunity to try new recipes in the kitchen. McCormick has a Look Book of spring-themed recipes that will inspire cooks of all levels to create the perfect springtime meal for family and friends. Lemon Cheesecake Bars (pictured below), Cheesy Bacon & Egg Brunch Casserole, Orange Glazed Ham, and Delicious Deviled Eggs are just a few of the mouthwatering ideas you will see there.
I recently visited the McCormick Look Book to find a dessert recipe. I am not exaggerating when I say that I opened the Look Book and wanted to click on just about every recipe I saw – they all look so delicious! Luckily, you can save recipes in your very own online scrapbook collection (called “My Look Book”) right there on the website. Pinterest users can easily pin favorite recipes, too.
One Look Book recipe that immediately caught my attention was the Vanilla Rich Chip Cake (pictured above). My aunt used to make a cake just like this for all of our family reunions. I remember loving the cake and always wishing I had the recipe. Thanks to McCormick’s Look Book, I found it! The recipe calls Vanilla extract, and I used McCormick® Pure Vanilla Extract. I will definitely use the Look Book for future cooking and baking inspiration.

Funny coincidence: When I opened the box of McCormick Vanilla Flavor, I noticed the recipe printed on it: Vanilla Rich Chip Cake. Looks like I’m not the only one who thinks this cake is sure to become one of your family’s favorites!
{Recipe} Vanilla Rich Chip Cake
Ingredients:
1 package (18 1/4 ounces) yellow cake mix
1 package (4-serving size) vanilla instant pudding mix
1 cup sour cream
1/2 cup vegetable oil
1/2 cup water
4 eggs
1 tablespoon McCormick® Pure Vanilla Extract
1 cup miniature chocolate chips
Directions:
1. Preheat oven to 350°F. Beat all ingredients, except chocolate chips, in large bowl with electric mixer on low speed just to moisten. Beat on medium speed 2 minutes.
2. Stir in chocolate chips. Pour into greased and floured 12-cup Bundt pan.
3. Bake 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Invert cake onto wire rack. Cool completely. Sprinkle with confectioners’ sugar or drizzle with Vanilla Butter Glaze (recipe follows), if desired.
Makes 16 Servings.
Another great thing about using the McCormick Look Book was the handy Test Kitchen Tip I found along with the recipe. If you are making this cake, you’ll want to us the following tip – it really works:
Test Kitchen Tip: To prevent chocolate chips from sinking to bottom of pan, reserve 1 tablespoon of the dry cake mix. Toss chocolate chips in dry cake mix before stirring into the batter.
For an even richer vanilla flavor, top the cake with the Vanilla Butter Glaze. (I did not use the glaze this time, I simply dusted the top of the cake with confectioners’ sugar.)
Vanilla Butter Glaze: Mix 3 tablespoons butter, melted, 2 1/4 cups confectioners’ sugar, 3 tablespoons water and 1 1/2 teaspoons McCormick® Pure Vanilla Extract until smooth. Let stand 3 minutes or until thickened. Makes 1 cup.
