My family loves this easy homemade ice cream recipe so much, we make quite often, especially in the summertime. No Churn means no ice cream maker is needed. Everyone enjoys this minty twist on the classic cookies and cream ice cream flavor.
I make Mint Cookies and Cream Ice Cream with Mint OREOs. The original kind of OREOs are equally delicious if you want to substitute them in the recipe, it’s a total toss up as to which one we like best. Which would be your favorite, Mint or Original OREOs ice cream?
Four simple ingredients turn into a delicious homemade ice cream treat. You’ll need: OREO cookies, heavy cream, vanilla and a can of sweetened condensed milk. Follow the step-by-step instructions listed below, and your ice cream should turn out perfectly every time.
Although you don’t need an ice cream maker, it’s a lot easier to whip the heavy cream using a mixer. It takes about 7-10 minutes of whipping in my stand mixer for the heavy cream to thicken up and start forming peaks. You could also use a hand mixer to make this step easier.
I use my food processor to chop the cookies into fine pieces, but you can do that part by hand if necessary. The food processor turns the cookies into fine crumbs in about 5 seconds.
You’ll still want to set aside a few OREOs to crumble by hand and stir in for larger pieces in the ice cream. The bigger cookie pieces are my favorite part to eat! I also set aside extra OREO cookies to stick on top of the finished ice cream when it’s time to serve (as shown in photos.) I like to stick an OREO cookie on top of the scoop.
- 14 Mint OREO Cookies
- 2 cups Heavy Whipping Cream
- 1 tsp Vanilla
- 14 ounces Sweetened Condensed Milk
- Put 8 OREO cookies in a food processor and chop into fine pieces. Set aside.
- Crush 6 OREO cookies by hand to create chunky cookie pieces. Set aside.
- In a stand mixer (or large mixing bowl), use a whip attachment to whip heavy cream and vanilla together until peaks form.
- Use a large spoon to fold in the condensed milk to the whipped cream/vanilla mixture.
- Fold in the OREO cookie crumbs and chunky pieces from steps 1 and 2.
- Pour ice cream mixture into a 9 inch loaf pan. Cover with foil and freeze until solid (about 6 hours.)
Tip: Allow frozenĀ ice cream to soften about 3 to 5 minutes at room temperature before trying to scoop it out.
