Strawberry shortcake is one of my family’s all-time favorite summer desserts. Layer fresh strawberries, homemade strawberry whipped cream and angel food cake for a trifle so scrumptious, you never have to worry about having leftovers.
Strawberry shortcake trifle is a classic dessert that is easy to make and always welcome at summer potlucks and barbeques. I have never, ever had any leftovers. Sweet strawberries and cream taste so good with a fluffy angel food cake. I buy a bakery style angel food cake so all I have to do is slice fresh strawberries and layer those with homemade strawberry whipped cream lovely no bake dessert.
If you don’t have a trifle bowl, try making this in a tall bowl. Be sure to have a large spoon on hand to scoop out servings. Another fun idea is to make individual servings of strawberry shortcake trifle by layering the cake, cream and berries in small mason jars. I think the wide mouth jars are easiest, but regular mouth size jars work great, too.
- 5-6 cups Fresh Strawberries
- 3-4 Tablespoons White Sugar, divided
- 3 cups Heavy Cream
- 1.5 cups Powdered Sugar
- 1 Angel Food Cake *I use pre-made angel food cake from the bakery. You can also use pound cake.
- Wash and remove stems from strawberries. Put 1 cup of strawberries in a blender or food processor to mash. Sprinkle with 1 tablespoon of white sugar and set aside.
- Whip heavy cream and powdered sugar until stiff peaks form. (This step usually takes my stand mixer about 7-8 minutes to whip the cream into peaks.) Divide whipped cream in half and gently fold in the mashed strawberries from step one to make strawberry (pink) whipped cream.
- Slice the remaining strawberries and sprinkle with 2-3 tablespoons of sugar. *Use more or less to taste, depending on the sweetness of your strawberries. Slice the angel food cake into 1-inch squares.
- Layer in a trifle dish: 1/2 of the cake squares, strawberry (pink) whipped cream, sliced strawberries, white whipped cream. Repeat. Top with a layer of sliced strawberries. Serve.
