The first microwave mug cake I ever made came from the Mug Cakes: 100+ Speedy Microwave Treats To Satisfy Your Sweet Tooth book by Leslie Bilderback. I was amazed to see it was possible to make a single serving cake in the microwave. (See Leslie’s Caramel Apple Mug Cake recipe.) I got on a mug cake kick for awhile, then put my cookbook away and haven’t made any since.
My 9-year-old son was the person who got me back into making mug cakes. A few weeks ago, he wanted to make a chocolate mug cake like he had eaten at a friend’s house. We tried and tried to find the perfect chocolate mug cake recipe (for him) and have come close, but not quite. Once we find it, I’ll be sure to let you know.
Our search for chocolate mug cakes made me want to find the perfect pumpkin spice mug cake recipe. The minute the leaves start turning Fall colors, I start craving pumpkin spice. It’s weird.
It took me a few tries to find just the right pumpkin mug cake, but I finally hit on THE ONE. It’s easy because it starts with a boxed cake mix. The only other ingredients you need are pumpkin (I used canned pumpkin), pumpkin spice and water!
I did play around with the amount of pumpkin spice to put in the mug cake mix. I thought that 1/2 a teaspoon wasn’t pumpkin spice-y enough, and 1.5 teaspoons was way too much. Long story short, I eventually figured out that 3/4 a teaspoon of pumpkin spice is just the right amount for me.

- 6 Tablespoons White Cake Mix
- 2 Tablespoons Canned Pumpkin Puree
- 2 Tablespoons Water
- 3/4 teaspoon Pumpkin Spice
- Put all ingredients into a microwave-safe mug. Stir until thoroughly mixed. Microwave for 60 seconds. If you use canned, make sure you are using 100% Pumpkin Puree and not a Pumpkin Pie Mix.
Note: Microwave oven cook times can vary. If your mug cake still looks wet on top after 60 seconds, cook it a little more in 10 second intervals until it's done.
